 Springtime Quiche


I love making a quiche because the leftovers can be had at any meal. This has local eggs from neighbors and our asparagus, roasted peppers from the freezer and local Asiago Cheese from Foxboro cheese Co. We had a salad with all local greens,sprouts and micro greens.  So in making this I know i wont have to cook for at least 2 days.

A EARLY SPRING MEAL



Monday nights dinner.  Pork Chops from Dufort Farm Rehoboth,  Rhubarb and asparagus from our garden. Made a lovely sauce with the rhubarb, there was only a little Rhubarb  ready. Usually I would  freeze it for later but  then it’s gone into the depths of the deep freeze never to be seen till it is a large blob of Frost. I used Hippy Pilgrims Orange Cranberry Garlic salt on the chops. The sauce was lovely, and the chops flavorful and juicy. I cooked the chops in a cast iron pot with oil waiting till it was shimmering. Next I seared them on one side for about 5 minutes then turned over and cooked about 2-3 minutes more till they were 140 degrees inside let set for 5 minutes then served. It was delicious.  Make sure to visit your local Famers Markets there are many around. A Spring Salad 

 Today, Great spring greens for lunch. A mix of spicy greens such as  mustard greens, tatsoi, mizuna, fresh spinach, mixed sprouts and pea greens all local. Although I am usually not a fan of lettuce and would rather have chunks of vegetables and not bother with the greens  I do love them in spring all the choices, and flavors. We are not talking plain romaine here. These greens were all bought in Providence last weekend and they are so fresh and crunchy and tasty. Not sure who I bought the Spinach And Spicy greens from.  I bought pea shoots from Allens farm Westport and the Super Babies Salad from Farming Turtles consists of baby spicygreens arugula,beets,mizuna,parsley,peashoots and sunflower. The taste of all these leaves of sorts and sizes is so good you really don't need the extra veggies and olives, cheese and eggs I added. If you’re near a farmers market stop and grab some spring greens. Kingstons  1st market of the season was at Grays beach yesterday and had many vendors, everything from local meats, specialty salts, vegetables, candles, scallops, food trucks and a band. Plymouth farmers market is making the move from Plymouth Plantations to G Pub Entertainment Complex 101 Carver Rd Plymouth Ma. On May 18th from 2.30-6 every Thursday.  The Plymouth market has been going for many years and has a great array of vendors. Buzzards Bay now has a Farmers Market on Wednesday’s. There are also markets in hingham and Hanover and all over Massachusetts. See  the latest issue of Edible Southeastern Magazine for all the local markets.
